Manuel Esteban Bueno and his wife grow coffee at Finca Guavito. This is in the Guadalajara de Buga, Valle del Cauca region of Colombia. The coffee is picked and hand-sorted every day by Manuel and his team. The cherries are left to ferment inside ceramic tanks for 50 hours, then pulped and left to ferment for further 40 hours inside another ceramic container. Later, the coffee is gently washed and dried on raised beds for 20 days.
