We roast and serve coffees that we think taste great. Our offerings change throughout the year, depending on what's in season and what we think will work for the consumer. We buy and roast in small batches to ensure we bring out the best qualities in every lot.
At our espresso bar, we are able to roast small highly controlled batches of coffee. The people roasting the coffee are the same people pulling shots and serving the coffee to the customers. This connection with the roasting process has enabled us to fine-tune our roasts over the last twelve years.

The pack includes
1x 125g Diofanor Ruiz Washed
1x 125g Diofanor Ruiz Black Honey
1x 125g Diofanor Ruiz Natural
Washed process: Ripe coffee cherries are de-pulped and then taken through either a fermentation-and-wash method or a machine-assisted wet process to remove the rest of the mucilage before they are dried on patio beds.
Honey process: The skin is removed, but some of the fleshy insides (the "mucilage"), remains while the beans are dried. But what is Black Honey? In short, it's defined by the amount of mucilage, light, and drying time.
Natural process: Coffee cherries are dried either on patios or raised beds in the sun. To prevent the cherries from spoiling, they are raked and turned throughout the day and then covered at night or during rainstorms. After the cherries have been dried to the optimum level, they are sent to mills to separate the seeds from the rest of the dried fruit, otherwise known as being "hulled."
